What is your business? I am a Patisserie Chef based from my home baking cakes, cookie cakes, cupcakes and many other sweet treats.

Can you tell me a little about yourself? Mid 2018, I quit my full-time administration job at a local radio station to pursue something different in life, a passion I have had since a little girl… BAKING. I never ever imagined I’d be baking the cakes I am today and am inspired each day to create something better than the last. I love that baking brings out my creative side, I find it quite calming to be in my kitchen, it is like my happy place.

How long have you been in this business for? I started this business originally with my best friend a year ago. We worked together on our business for around 6 months, until I then took it over and re-named it my own business name “Ohh Liv-a Little”. Since then I have been full steam ahead with my creative side. Showcasing my skills through my work and trialling new recipes to only come up with the most amazing flavours for my cakes.

How did you first get involved with baking? From a young age I have always enjoyed baking, my fondest memories are baking with my Grandma in her kitchen. If it wasn’t for my Grandma, I don’t think I would be where I am today. She is my reasoning behind everything and my biggest idol in life, I owe it all to her. Thank you, Grandma.

ohh liv a little Patisserie Chef Tweed CoastAre you full time? How and why did you start your business? Yes, I work full-time baking. I got into my business by firstly quitting my admin job and wondering what I will do next with my career. I decided that while I wasn’t working, I was to use my time wisely and further my knowledge. Therefore, I enrolled into Tafe studying as a Patisserie Chef. This was the best experience for me, not only did I have the most amazing teacher who I have learnt so much from. I just loved being surrounded by fellow foodie classmates, where we all spoke the language of FOOD. This was a huge growing and learning experience which I am so thankful for that I got to do.

My business came into play at the beginning of my Tafe journey. My bestie proposed to me a partnership of baking together. I was so keen to do this as I had just quit my job wondering what my next career move would be. It was so amazing to begin this next chapter with my bestie by my side doing it together.

She was still jugging her job plus the business as best she could. In the end she got too busy and it was me doing most of the baking. I asked her if she would be up to the idea of me taking it over and re-branding our business into my own. Thankfully, she was on board and couldn’t have been happier for me to turn our business into my own and I am so grateful she allowed me and supported me.

MY business wouldn’t be where it is if it wasn’t for my partner and my Mum. They both have put so much into helping me get on my feet with the business.  I am extremely lucky to have them both.ohh liv a little Patisserie Chef Tweed Coast

What do you find most challenging about your job? To be honest, there are so many challenges in baking. So many things can go wrong and if you’re not concentrating or in the zone. You then have to be prepared to start whatever it is your baking all over again. As I am such a perfectionist, I find the hardest challenge is perfecting. I don’t like to just go with the flow and see what happens. I like to know exactly what I am doing and how I am doing it. Which order I will do things in order, to have the most amazing finished product that not only looks good but tastes amazing too.

What do you do when you aren’t baking for your clients? When I’m not baking, I am spending time with my amazing partner, my beautiful stepson and our big German Shepherd X Husky dog, Boss. We love to go to the beach, ride our bikes, have fires out the back, swim in the pool and just be together as a family.

It is a known fact in my household that when I am baking. I always put something aside for the boys. They don’t like to miss out on any of my baking. My macaroons are generally the first thing they ask for. If I have off cuts of cake and spare icing, I make a little wonky cake for them to eat. The boys love to decorate it however they like. I love watching them do this as they try and make their cake look just like how I do it. This makes me so happy that they are watching and learning from me.

They are the biggest achievements in my life and love spending every moment I can with them, making the best of memories.

What do you love the most about your job? I absolutely love making something special for someone else. Seeing their reaction when they see their masterpiece, they have entrusted me to bring to life for them. There is no better feeling than making others smile. This job is my ideal dream job and am so happy I followed my dreams.

Do you have any accolades? I have my Certificate 3 in Patisserie which I value so much and hold close to my heart. It is a great achievement for me. I never thought I would ever go back to a classroom/learning environment, so receiving this has made myself very proud.

A lot of people are interested in making cakes. Can you share some tips for my readers? Whatever it is you are wanting to bake, always ensure you read your method in full before you start. It is always good to have an idea of what you are going to be doing and not stress about reading paragraphs throughout your cook.

Time management is crucial in baking. Things need to go straight into the oven and can’t sit out on the bench. Sometimes your ingredients list gives you the full amount of something and you go and wack it all in together then you start reading your method. Until realised you should have saved some for another element and it sucks when you don’t have any extra to then use!

I’ve made that mistake many times and found myself back at the shops quickly buying more ingredients. Just be prepared, know what you’re doing and ensure you have plenty of ingredients in case you need to do something again.

I heard about personal branding sessions which was so appealing to me. It is specifically designed for you and your business. Never having heard of anything like it before and I loved the idea of receiving so many different images to use.

I have never thought to do a photography shoot before, until I heard of this service Katrina offers. It’s so well thought of from her, so cleverly put together. Once I had my meeting with her, I was so excited to begin planning for the shoot. Katrina was always there to talk to and run ideas by. She really helped me achieve the image in my head of how I would like my photos to come across.

I felt like she was 100% there to help me in all aspects of making my business look the best it can. I am so thankful that she shared her little photography tips and tricks, to help me further achieve better photos when I take them myself in my own home. She gave me information on lighting and different techniques you can do to capture an image at its best. Were you happy with the service and end products? Um, YES! I knew they would look good but did not think they would look this good! I can’t believe the attention to detail she demonstrated throughout the shoot to then have the images look as beautiful and stunning as they are. They are everything I wanted and MORE! Pure talent and it shows in every single image.

Anything else you would like to share? Throughout my photo-shoot experience, I have realised how important it is to take the time and spend the money on a shoot like this. It is so beneficial to my business and I will continue to work with Katrina and Astaria for all future shoots because Katrina really just gets it.
